Why is my reach-in cooler running but not holding temperature?

Three usual suspects, in order: a clogged condenser coil, a worn door gasket, or a failing evaporator fan. On True T-49 series cabinets the gaskets crack at the bottom door corners around year four, the duty cycle climbs, and cabinet temp drifts from 38 into the mid 40s. All three are same-visit fixes. If the compressor is short-cycling, it is often just the start relay, not the compressor itself.

My glass-door merchandiser fogs up so customers can’t see the product. Can that be repaired?

Yes, and it is usually the door anti-condensation heater wire going open circuit, a one to two hour repair. Summer humidity in coastal MA and RI runs 80 to 90 percent, so a dead door heater fogs glass fast. One New Bedford store saw cold-drink sales jump the week the glass cleared. If it only fogs in July and August, the heater may be undersized for coastal use.

What temperature does my prep table need to hold to pass inspection?

41 degrees F or below for TCS food, in the rail pans and the base cabinet both. These cabinets fail in cheap, predictable spots: low-mounted condenser fan motors killed by grease and dust around year five to seven, sagging door hinges that break the seal and ice the evaporator, and worn gaskets. All are quick fixes on a solid cabinet. Replacement only makes sense on an old unit with a failed compressor, like a 15-year-old reach-in at end of life.

Prep tables live the hardest life in the kitchen. The condenser sits down low where flour, grease, and line debris clog it, the lid stays open all shift, and pans block airflow across the rail. When rail temps drift past 41 degrees your inspector will flag every pan in it.
